A Night of Extraordinary Cuisine, plus Live Music with Amber Falls Winery, at the hip, historic Commodore Hotel

The four-course meal starts with a salad of mixed greens with roasted pear, spiced pecans, blue cheese crumbles, red onion and orange basil vinaigrette, followed by the “Small Bites” course, which is roasted red pepper hummus served with crispy flatbread. The suggested wine for the salad and Small Bites courses is Amber Falls’ Chardonel, made with white off-dry/semi-sweet Chardonel grapes, a French hybrid which grows well in the Middle Tennessee area. Entrée choices are Sole Doré, a pan-seared white fish served with French lemon cream, and Filet Wellington, a succulent beef filet stuffed with a mushroom duxelle and comes with a roasted garlic and shallot demiglace. The Filet Wellington, served inside a puff pastry, comes with a crab cake adorned by jalapeno orange hollandaise sauce. The wine suggested for pairing with the Sole Doré is Chardonel; Crescendo, an award-winning dry red, is the wine recommended for the Filet Wellington. Both entrees are served with white cheddar potato gratin and roasted zucchini and grape tomatoes. Chef Grauer uses an excellent Tennessee cheese from Sweetwater Farms for his white cheddar potato gratin. The featured dessert is a white chocolate mousse served with fresh berry compote. Paired with the dessert is Amber Falls’ blackberry wine, named The People’s Choice. The People’s Choice, released last November, is part of the winery’s Presidential Series, and a portion of the proceeds from sales of the wines in the series help maintain and preserve the historic James K. Polk Home & Museum in Columbia, TN. Linden’s Commodore Hotel has been named one of Six “Great Places to Stay in Tennessee,” along with other notable hotels such as Blackberry Farm, The Peabody Hotel, and Carnegie Hotel. “With spring now in the air, it would be fun to visit Amber Falls Winery in the afternoon, learn about their wines and meet their fantastic team, then make the short trip to the Commodore, where you can check in and relax a while in your well-appointed room,” said Kathy Dumont. “Then, join winery owners Tim and Judy Zaunbrecher, and me and Chef Michael, for a four-course dinner created to enhance the nuances of the food and wine. What a great way to celebrate springtime.” Beginning at 5 p.m. each evening of the dinners, a private reception for hotel guests only will offer guests the opportunity to meet the chef and owners. Complimentary beverages and hors d’oeuvres will be served. On Friday evening, diners will be entertained by Martin Rodriguez. Rodriguez, a native of Southern California, has been playing the guitar since he was 13 years old. His professional music career has spanned 30 years. He studied music recording and engineering at MTSU and played in bands that covered everything from country to blues to rock. He has worked with and shared the stage with such notables as Wide Spread Panic, The Nighthawks, and others. He also has recorded and performed with producer Leonard Wolf (Garth Brooks, Dr. Hook) and written songs for McGraw Music. On Saturday evening, Diana Kelley, originally from DeMotte, Indiana, will entertain during dinner. A singer-songwriter now living in White Bluff, TN, she has won numerous songwriting awards and most recently was the winner of Puckett’s “Rising Star” Songwriting competition in Franklin, TN. Cost of the meal is $42 per person (food only). In order to enjoy the wines, Amber Falls gift certificates of $18 per person are available for the wine portion, or guests may stop by Amber Falls Winery & Cellars, 794 Ridgetop Road in Hampshire, and purchase wine there to bring to the dinner.
