
Trotter’s Whole Hog BBQ, located in the downtown Historic District of Sevierville, Tennessee, was created to define East Tennessee in the world of whole hog barbeque and to establish roots for this cooking style.
The hogs are cooked whole, low and slow. The process begins with the hog belly down while being smoked for several hours then flipped and mopped with the house-made sorghum sauce. One of Rule’s main focuses is on the smoke, as his method will implore a distinct smoky flavor that is not to be mistaken.
The restaurant has a casual and inviting atmosphere. Guests enjoy tableside service. While the menu spotlight is the whole hog, additional offerings include ribs, yardbirds, sausages, and all of the traditional barbeque fixings. Guests are invited to pour their own beer from 20 taps, featuring local and regional craft beers. Trotter’s also has plenty of family pack options to take home as well as catering. The restaurant offers indoor and outdoor seating and features regular live music performances.
